Our interpretation of a local “pajarilla”: Macabeo aged under flor.

It comes from Macabeo vineyards grown at high altitude, dry-farmed and cultivated with a respectful approach, aiming to preserve the variety’s natural freshness and tension. These conditions are essential to sustain prolonged biological aging, where the wine evolves under the protection of the flor veil.


Inspired by our experiences with Matías Michelini in Argentina, we moved our biological aging from demijohns to clay amphorae, whose openings allow controlled oxygen ingress.
Each year, we extract 75% of the wine to bottle the vintage and top up the remaining 25% with new wine, creating a kind of living solera that evolves over time. This system allows us to develop our own version of the region’s traditional “pajarillas.”
Medium lemon yellow color. Aromas of orange blossom, quince, raw almond, and a subtle hint of mulberry. On the palate, it is fresh, clean, and direct, with a fluid texture and iodine-like flavors that add beautiful complexity. A singular Macabeo with 4–6 years of aging potential.
