Macabeo vineyards at high altitude, cultivated respectfully on poor, dry soils that naturally impart tension to the grapes. Harvested at the optimal moment of freshness to preserve acidity and varietal character, both essential for this type of biological aging.
Working with a white wine under flor was a challenge that culminated in our first unfortified biologically aged Macabeo. A flor veil developed in demijohns, and the wine was later transferred to terracotta amphorae for refinement.
This second release reveals even greater intensity, precision, and depth.
Intense aromas of lemon peel, raw almond, fennel, and sea salt. The palate is vibrant, sharp, and saline, with an electric, dry profile. The biological aging adds unique nuances and a lively energy that evolves beautifully over time in the bottle. A surprising wine with a free spirit and sincere beauty.
