Viticulture

It comes from traditional high-altitude vineyards, dry-farmed and cultivated with respectful practices. The selected white grapes were used for an experimental winemaking, designed to explore new paths of expression and let time act as a creative ally.

Winemaking

This wine fermented in two demijohns, in a controlled environment yet open to surprise. Afterwards, they were moved to the underground cellars, where the wine slowly matured… and was forgotten for months. This “forgetfulness” allowed for a unique development, resulting in a wine of singular depth and complexity — impossible to reproduce through a planned process.

Tasting notes

On the nose, it combines white fruit, dried herbs and a subtle oxidative touch that gives it character and uniqueness. On the palate, it is enveloping, with a creamy texture, precise acidity and a long, contemplative finish. A wine that invites you to surrender to time.
