Macabeo vineyards planted at high altitude, in poor, well-drained soils, cultivated respectfully and without irrigation. The grapes were harvested at their optimal point of freshness, avoiding overripening to preserve the variety’s natural tension.


Inspired by the historic “Pajarillas,” we crafted a Macabeo aged under flor without overripening. The veil of flor enriches the wine with complexity, sharpens its profile, and protects it from oxidation by preventing direct contact with air.
The wine was aged partially in demijohns filled to two-thirds and then refined in terracotta amphora, developing a unique energy. A short, precise aging that defines its character.
Lemon peel, sea salt, and fresh fennel. The palate is sharp and saline, with tension and a dry, vibrant finish. A delicate, electric interpretation of Macabeo aged under flor.
