It comes from traditional Macabeo vineyards in Aragón, dry-farmed and located at high altitude — ideal for this type of winemaking. The variety’s structure and composition allow it to reach naturally high alcohol levels (up to 17%), which is key for the biological and oxidative ageing typical of the region’s historic style.


This wine was born as a rarity inspired by the traditional “pajarillas” made in Cariñena nearly a century ago. These were dry, sharp wines crafted from overripe Macabeo and aged for many years in barrels and large wooden vats.
Our version combines biological and oxidative ageing, refined in clay amphora, and represents the fourth release of this deeply Aragonese experimental project.
Aromas of raw almond, iodine and ripe lemon peel. On the palate, it is dry, sharp and saline, with a precise and vibrant profile. A contemporary interpretation of a historic wine, full of soul and memory.
